    Wenslydale   £10.95 Kg
    Wenslydale - A crumbly, moist cheese with a sharp mild flavour. Originally made with ewe's milk, it can be traced back to the Monks who came over with William the Conqueror in the 11th Century

    Lancashire   £10.95 Kg
    Lancashire - Creamy Lancashire is mild lactic in flavour, a cheese which is moist, almost lumpy in taste.

    Mature Cheddar (min 6 months)   £11.95 Kg
    Mature Cheddar (6 months min matured) - Cheddar has been copied all over the world but nowhere is it really Cheddar unless it comes from the green and verdant hills that are England. Cheddar has a firm, dense, biteable almost chewy texture, its flavour rich with a sharp note and a nutty aftertaste.

    Ribblesdale Goats Cheese   £14.95 Kg
    Ribblesdale - Produced in Ribblesdale, Yorkshire this is a pressed, pasteurised-milk cheese, which come in cows, goats and sheep's versions. The flavour is firm, nutty and mild.

    Red Windsor   £10.95 Kg
    Red Windsor - A pale cream cheddar cheese marbled with a mix of port and brandy.

    Sage Derby   £10.95 Kg
    Sage Derby - Hard pressed, pasteurised cow's milk cheese. Historically, the sage-flavoured cheeses were produced in spring to be eaten in the autumn. Sage juice was used for flavour and the juices of another leaf, such as spinach was used for the colour. The cheese has a clean, mild and smooth flavour and texture.

    Shropshire Blue   £10.95 Kg
    Shropshire Blue - Shropshire Blue has a flavour somewhere between Blue Cheshire and Blue Stilton, a creamy orange coloured paste with blue-green veining; annatto produces the orange colour and Penicillium roquefortii produces the veining. The cheese is essentially an orange coloured Stilton style cheese. It is made from pasteurised cows' milk and using rennet suitable for vegetarians. The cheese is matured for 12 weeks but it can be matured for a further 12 weeks to produce a creamier fuller flavoured cheese. Shropshire Blue is excellent throughout the year.

    Garstang Blue   £16.95 Kg
    Garstang Blue - A Lancashire Blue cheese produced by Dew-Lay, Lancashire cheese makers based in Garstang, described by themselves as having a creamy soft texture of a Lancashire but with a rich blue mellow flavour.

    Smoked Lancashire   £12.95 Kg
    Smoked Lancashire - A few Lancashire cheese producers make this, its basically Lancashire cheese that is smoked!

    A description by Mrs Kirkhams of Lancashire - Smoked cheese makes an interesting addition to any cheeseboard, and with Lancashire the smoky flavour is not too overpowering. As with the unsmoked version, this is excellent when grilled.

    Stilton   £10.95 Kg
    Stilton - The Stilton is a well matured, rich creamy blue cheese. In the early 1900's Stilton makers joined forces to stop the cheese from being copied. They specified how it should be made and limited production to Nottingham, Derbyshire and Leicestershire.

    Swaledale - Produced in North Yorkshire, this is a pressed, pasteurised ewe's and cow's milk cheese, very pale cream in colour and with a fresh, lemony, buttery flavour
